    Lemon balm, also known as Melissa, is used to give dishes a subtle hint of lemon. It is most used in sweet dishes, fruity desserts, or cocktails. While it’s well suited to fish or chicken, it’s worth noting that lemon balm loses its aroma during the cooking process and is best added at the end of cooking. Dried lemon balm is commonly used to make a tea to help soothe nerves and induce sleep.
